The nutritional program at Kokolulu Farm and Cancer Retreats (KFCR) teaches Food as Medicine concepts for prevention of disease as well as a solution to help fight cancer and disease in general, which include easy-to-understand-and-follow healthy eating guidelines. (Great news! Kokolulu has just been awarded a $5000 grant by the Atherton Family Foundation to expand its FAM program to the community.)
KFCR guests learn about the foods that research show to be most helpful to healing. They gain an understanding of which foods are most beneficial (and which to avoid) to health and healing. They learn healthy food preparation, how to shop for live, healthy foods and which foods to avoid. Guests can learn to grow at least a few of their favorites without using harmful chemicals!
Food is information carrying detailed instructions for every gene and every cell in the body, helping them to renew, repair, and heal or to be harmed and debilitated, depending on what we eat. Certain “non’-foods inflame our gut and cells, leading to whole-body inflammation. This inflammation can show up as pain, allergies, headaches, fatigue, and depression and that leads to weight gain, diabetes, and heart disease.
Research has shown people learn faster when it is hands on and fun. During the time in the kitchens we are able to teach life skills, nutrition, and simple techniques while offering the scientific facts to people in a digestible format. We are able to inspire participants to make lifestyle and dietary changes that could help save their lives by showing them how to incorporate the right foods that build their immune system to prevent and battle disease.
The American Cancer Society and the American Institute for Cancer Research both estimate that more than 30% of cancer can be prevented through healthy diet, physical activity, and maintaining a healthy weight.
